You have to update the quest journal by finding the amount of copper ores. This can easily be done by putting the ores in a chest and manually taking them out one by one. The game counts this as gathering ore and the quest journal will be updated. However, sometimes this quest will specifically require you to mine the ores in order to update the journal.
